Apple-Quinoa Breakfast Muffins

2 whole medium sweet apples, cored and grated, with or without skin (about 2 cups UNpacked grated apple)
2/3 cup coconut sugar (or use brown sugar)
1/3 cup sunflower or other light-tasting oil
2 cups cooked quinoa
2 tsp pure vanilla extract
2 tsp apple cider vinegar
1/4 cup coarsely chopped pecans
1/4 cup raisins or goji berries
1 Tbsp ground flax seeds
1/4 cup unsweetened almond or soy milk (or milk of choice)
1 cup Ricki’s All Purpose Gluten-Free Flour Mix (or other all purpose GF flour)
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp fine sea salt
1 tsp Chinese 5-Spice Powder (or use cinnamon)
1 Tbsp whole psyllium husks
1/2 cup gluten-free rolled oats (not instant or quick-cook)
