Arroz con Pollo


3 lb. chicken thighs, breast halves and/or drumsticks
Salt and freshly ground pepper, to taste
3 Tbs. olive oil
1 yellow onion, chopped
3 roasted red bell peppers, cut into thick strips (see related tip at left)
4 large garlic cloves, minced
1/4 tsp. saffron threads, crushed
2 cups long-grain white rice
3 cups chicken broth
2 Tbs. chopped fresh oregano
1 can (14 1/2 oz.) diced tomatoes with juices
