Artichoke Lemon Penne


Ingredients (serves 2):

1 tbsp butter

1 tbsp flour

1 cup milk

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

10 artichoke hearts

1 large handful baby spinach leaves

1 ball fresh mozzerella (I love Toonsbridge Dairy)

salt and pepper

Pasta of your choice
