Arugula & Tofu Salad w/ Blackberries, Sweet Curried Pecans & Honey-Grapefruit Vinaigrette


Ingredients for the salad:
6 ounces arugula (or spinach)
1 ½ cups fresh blackberries
½ medium red onion, sliced paper thin
2 ½ cups cubed tofu (can be grilled tofu or tempeh)
1 cup Sweet Curried Pecans, see recipe here
Honey-Grapefruit Vinaigrette, see recipe below

Ingredients for the Honey-Grapefruit Vinaigrette
¾ cup Ruby Red (or pink)grapefruit juice, from 1 large grapefruit
zest of 1 Ruby Red (pink) grapefruit
¼ cup red wine vinegar
½ cup extra virgin olive oil
¼ cup canola oil
1 teaspoon Dijon mustard
¼ cup honey
⅛ teaspoon cracked black pepper
¼ teaspoon sea salt
