Asian Cabbage Rolls with Spicy Pork

THESE CABBAGE ROLLS take more than a cue from the spicy gingered pork inside Chinese dumplings. They're stuffed with the fresh flavors of cilantro, soy sauce, sesame, and scallion. This recipe makes a double pan, since you will definitely want leftovers of this light and delicious dinner! • Serves 8

2 large heads napa cabbage
2 teaspoons salt
1 pound ground pork
1 cup cooked white rice, from ⅓ cup rice steamed in ⅔ cup water
½ pound shiitake mushrooms, finely chopped
2 large eggs, beaten
1 tablespoon toasted sesame oil
¼ cup reduced-sodium soy sauce
One 3-inch piece fresh ginger, peeled and grated
4 cloves garlic, minced or 1 tablespoon garlic paste
Freshly ground black pepper
1 bunch scallions, chopped
2 cups fresh cilantro, chopped
¼ cup reduced-sodium soy sauce
¼ cup rice vinegar
1 cup low-sodium chicken broth
1 tablespoon toasted sesame oil
1 teaspoon sugar
1 teaspoon sriracha or other hot chili sauce (optional)
