2 14 ounce can reduced-sodium chicken broth
1 pound turkey breast tenderloin or skinless, boneless chicken breast halves, cut into 1-inch pieces
2 cups sliced fresh mushrooms (such as shiitake or button)
1 1/2 cups water
2 medium carrots, cut into bite-size strips (1 cup)
1/2 cup chopped onion (1 medium)
2 tablespoons reduced-sodium soy sauce
2 teaspoons grated fresh ginger
4 cloves garlic, minced
1 1/2 cups sliced bok choy
1 cup instant brown rice
Lo-mein noodles (optional)
