Aunt Sue's Chow Chow

Notes: 

like a relish, kind of spicy, good on sandwiches.

Ingredients: 

1 quart chopped cabbage
1 quart chopped green tomatoes
4 green peppers
4 green sweet peppers
4 large onions
2 tsps. salt
1-1/2 cups vinegar
1 cup water
2 cups firmly packed brown sugar
1 tsp cinnamon
1 tsp all-spice
1/2 tsp cloves
3 tbsps. dry mustard


Chop the cabbage and tomatoes and peppers. Mix with salt and let stand overnight. Next morning, drain and press in cloth to remain all liquid possible. Boil vinegar, water, sugar and spices five minutes. Add chopped vegetable mixture and bring to a boil. Boil for 15-20 minutes until tender. Pour into sterilized mason jars.
