Notes: 

Makes 3 1/2 cups so you'll need a 1 quart (1 liter) jar or a few smaller containers. Can be stored in jar at room temperature for up to 2 weeks.

Ingredients: 

1 cup raw pumpkin seeds
1 Tablespoon EVOO
Coarse salt
1/2 cup large unsweetened coconut flakes
1/2 cup whole almonds, toasted
1/2 cup craisins (dried cranberries)
1/4 cup candied ginger, in 1/4" pieces
