Pomegranate Reduction
2 cups pomegranate juice
1/4 cup sugar
1 medium orange, juice and zest
Pot Roast
1 2/3 lbs boneless pork loin roast
2 garlic cloves, cut in slivers
3/4 teaspoon herbes de provence
4 teaspoons olive oil, divided
1/2 cup chicken stock
1 leek
3/4 lb butternut squash
1 large parsnip
2 large carrots
2 celery ribs
salt and pepper
