avocado and garlic potage

I translated the recipe from Japanese to English.


Serves 4

3 avocados
2 cloves of garlic
600ml chicken stock
200cc double cream
parsley, sliced avocados, and white pepper, for garnish

  1. Cut the avocados into small chunks. Grate the garlic,

  2. Stir-fry the avocados and the garlic in a small pan with low heat, crushing them. When the colour gets more vivid, add the chicken stock to boil, while mashing the avocados with a masher.

  3. Turn off the heat. Add the double cream.

  4. Garnish the soup with avocados, parsely and pepper.
