Babycakes NYC Granola

4 cups oats (I prefer Bobs Red Mill gluten-free)
1 teaspoon salt
1 tablespoon cinnamon
1 teaspoon ground ginger
1 1/2 cups unsweetened coconut
1 cup pecans
1/3 cup coconut oil (melted refined)
1/3 cup agave nectar

Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment and set aside.
In a medium bowl, combine oats, salt, cinnamon, .

Add coconut oil and agave nectar and toss until oats are covered. Pour mixture onto prepared baking sheet.

Bake for 15 minutes, stir, and continue baking for another 10 to 15 minutes, or until granola is golden brown. Remove granola from oven and allow to cool before serving.
