Bacon Cheddar Cheesecake (“The Ron Swanson”)

2 cups (452 g) 2% Low Fat Cottage Cheese

4 oz (112g) shredded cheddar cheese (can also substitute with mozzarella, just adjust macros)

2 large eggs

1 sprig of fresh green onion or chives, chopped

A couple dashes of your favorite hot sauce (I used Crystal hot sauce)

2 teaspoons (10 ml), Italian seasoning

Topping: 6 slices cooked bacon, chopped - I used sweet and spicy bacon but you can also use regular bacon!
