Bacon Ranch Chicken

Ingredients: 

Boneless, skinless chicken breasts (3-4 large)
Hidden Valley ranch dressing
Butter (or margarine)
brown sugar
cumin
Italian seasoning (optional)
onion
onion powder
red pepper flakes (optional)


  • Chicken: Trim chicken and cut shallow slits in the tops and bottoms. Marinate chicken in 1 cup ranch dressing, in a covered container or zip-top bag. Place in fridge for at least 30 minutes; longer is better.
  • Preheat oven to 400 degrees.
  • Melt ½ cup butter.
  • Remove chicken from dressing. Discard dressing. Coat chicken in crumbs you made.
  • Drizzle with melted butter on all sides.
  • Set elevated on a baking rack over a roasting pan.
  • Bake for 30-40 minutes, checking at 30 minutes.
  • When ready, drizzle very lightly with a little fresh ranch dressing, and top with bacon. (Crumble the 2 bacon strips you saved from the bean recipe.)
