2 Cups of Diced Baked Potato
1 Cup Diced Onion
2 Tbsp Canola (Rapeseed) Oil
2 Tbsp Flour
4 Cups Vegan Chicken or Vegetable Stock
2 Cups Water
1/4 Cup Tapioca Starch
1 Cup Instant Mashed Potato (like Smash!!)
Salt and Pepper to taste
Chopped Fresh Thyme
1 Cup Vegan Thick Cream (I used Oatly)

Spring Onion
Tofutti Sour Cream
Fried and Crumbled Tempeh Rashers
