Baked Quinoa with Sweet Potatoes and Almonds


QUINOA IS A SUPERGRAIN, one that has way more protein than rice or wheat and a complete set of nutrients. Well, it doesn't hurt that it's so nutritious, but I just like its nutty, slightly bitter flavor and its light and fluffy texture. This recipe is a fast, foolproof recipe for baked quinoa, with sweet potatoes to mellow out the quinoa's edge and almonds for crunchy interest. • Serves 6


2 cups quinoa
1 medium onion, diced
1 pound (about 2 large) sweet potatoes, peeled and diced into ½-inch chunks
1 cup fresh flat-leaf parsley, finely chopped
1 cup grated Parmesan cheese
1 cup toasted sliced almonds
½ teaspoon ground cinnamon
Pinch of ground nutmeg
2 teaspoons salt
Freshly ground black pepper
5 cups low-sodium vegetable or chicken broth
