Baked Trout with Almonds

Notes: 

Trout is my favorite fish, maybe because I was taught to cook them as fast as we caught them. Fresh is best, similar to picking sweet corn after the cooker is hot, for the sugar in sweet corn starts turning to starch within 20 minutes of being picked.

Ingredients: 

•4 trout, cleaned and rinsed
•2 lemons, halved and thinly sliced
•6 tbsp butter, melted
•½ cup sliced natural almonds
•¾ cup dry white wine
•Salt and freshly ground black pepper
•3 tbsp finely chopped parsley
