Ingredients: 

1 tablespoon + 2 tablespoons olive oil
353 grams/1 lb cremini mushrooms, stems removed
sea salt and ground back pepper, to taste
1 clove of garlic, peeled and thinly sliced
½ cup kalamata or sundried/fully ripened olives
1 tablespoon balsamic vinegar
2 teaspoons tomato paste
½ teaspoon gluten-free tamari soy sauce
