Banana Bread

Ingredients: 

1-1/2 cups whole grain wheat flour
1-1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 egg
1 cup mashed bananas (about 3 medium)
3/4 cups sugar
1/4 cup oil
1 teaspoon shredded lemon peel (optional)


  1. Grease the bottom and sides of loaf pan; set aside. In medium mixing bowl, combine flour, baking powder, soda, cinnamon and salt. Make a well in the center of the dry mixture; set aside.
  2. In another mixing bowl, combine egg, banana, sugar, oil and lemon peel. Add all at once to dry mixture and stir until just moistened.
  3. Spoon batter into prepared pan. Bake in 350 oven for 50-55 minutes. Cool in pan on wire rack 10 minutes. Remove from loaf pan; cool on rack. Wrap and store overnight before slicing.
