3/4 cup butter at room temperature
1 1/4 cup regular sugar
4 tbs honey
1/4 tsp salt
1 tbs vanilla
1 1/2 cup bananas, mashed
3 1/3 cup all-purpose flour
1 1/2 tsp baking soda
1 tbs icing sugar
1 tbs cinnamon
1 cup sour cream
2 eggs at room temperature
Preheat oven to 350 F ( 180 C). Cover muffin pan with waxed paper or cup cake paper.
In a large bowl mix together flour and baking soda, icing sugar and cinnamon. Set aside.
Put butter, sugar, honey and salt into a mixing ball and beat until light and fluffy ( about 15 minutes), scraping the side of the bowl as needed.
Add vanilla and keep beating.
Add mashed bananas and beat until everything is well blended.
Add the dry ingredients to the batter alternating with sour cream. Beat until well blended.
Add 2 eggs one at a time beating well after each one.
Add nuts or seeds or raisins or chocolate and mix it with spatula.
Scope muffin mix into prepared pans.
Bake 20 - 25 minutes or until a skewer inserted in the center should come out clean.
Leave to cool completely then keep in an air tight container.
