Basic Pie Dough

Ingredients: 

1 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons sugar
3/4 teaspoon kosher salt
8 tablespoons (1 stick) chilled unsalted butter, cut into small pieces
1/4 cup solid vegetable shortening
1/4 cup ice water, plus more if needed


Makes enough for one 8 to 10-inch single-crust pie.

In the bowl of a food processor, convince the flour, sugar, and salt; pulse to combine. Add the butter and shortening, and pulse until the mixture resembles coarse crumbs, with some large pieces remaining.

With the machine running, add the ice water through the feed tube in a slow, steady stream, processing just until the dough begins to bind and holds together when squeezed in the palm of your hand, 5 to 10 sec. If dough is too dry, add a but more water, 1 tablespoon at a time.

Turn out the dough onto a clean work surface and shape it into a flattened disk. Wrap it in plastic wrap and refrigerate it for at least 1 hour, or overnight. (The dough can be frozen for up to a month; thaw it overnight in the refrigerator before using.)
