Beef: Beef Tips in Gravy/

Ingredients: 

2 lb beef chuck roast, trimmed and cubed
1 small onion, chopped
1 clove garlic, minced
salt and pepper to taste
1 T olive oil + 2 T butter for frying
4 T flour
4 T (1/2 stick) butter
2 C half and half (half milk/half cream)
1 pkg (16 oz) egg noodles
