Beef Ribs with Rosemary and Garlic Roast Potatoes

serves 2

some rosemary roasted cubed potatoes
3 cloves of unpeeled garlic
zest and juice of 1 lemon
fresh rosemary
olive oil
1 x 2lb 11oz ribs of beef
black pepper

1. put garlic, lemon zest and tip of rosemary brush in a pestle and mortar, add olive oil
2. rub half of this marinade onto the beef ribs and leave for at least 1 hour
3. preheat oven to 220degrees, get potatoes parboiled and in the oven
4. fry ribs in the pan for a couple of minutes then put the pan in the oven for 20 mins.
5. turn ribs every 5 mins and put the rest of the marinade over them
6. cook to medium-rare
