Beef Stroganoff


This is comfort food at it’s very, very best. Strips of fillet beef, cream and buttered mashed potatoes – you just need a sofa with this dish and a maybe a newspaper to sling over your head before falling asleep after it.

Stroganoff is essentially a Russian dish and you can use a lot of different ingredients – chicken, pork etc, etc. For me it has to be beef that has just been seared on the pan for 5 seconds on either side and no more!! What makes this a unique dish is the Paprika and the lemon – these are what make a Stroganoff.


2 plates:

2 fillets of beef or Angus steaks, well seasoned and sliced into strips
1 good handful of roughly sliced chestnut mushrooms
1/2 cup of Dried Porcini mushrooms, steeped in hot water
1/2 white onion finely sliced
3 Cloves garlic minced
A splash of brandy
Chopped flat leaf parsley for garnish
Beef or chicken stock
Single Cream, Sour cream or Creme Fraiche
Fresh lemon juice
1 tps of smoked Paprika
