Beef Taquitos - by Parents of FM Kids member

Ingredients: 

1 lb roast
1 bay leaf
1/2 tsp salt, to taste
corn tortillas


Put the first 3 ingredients in a crockpot in the morning and add enough water to almost cover the meat (could use broth). Cook until almost dinner time. Shred with a fork. Pre heat oven 400 F. Cover your tortillas with a WET paper towel and microwave for 20 seconds to soften. Spray a pan with pam. Drain the meat a bit & chop it to small bits. Put the meat in the tortilla and roll it up. You can use a toothpick to hold them together. Place seam side down on the pan & bake for 15-10 mins or until crispy on the outside. Top with cheese or avocado, if you tolerate it. Mine always split apart but no one seems to mind :)
