Beet Salad with Almond Butter

Sounds weird but it is great... I copied it from something I had at Hierloom

Ingredients: 

Roasted Beets Cold
Arugula
Pickled Fennel (I didn't have it and didn't want to make it I used cornichons)
Dressing- I made olive oil, red wine vinegar, a bit of course ground dijon mustard, salt, pepper
Feta cheese


  1. put almond butter on the bottom of a salad plate, spread it out
  2. slice roasted beets and fan them out over the almond butter
  3. Put arugula, sliced cornichons in a bowl toss with the dressing and Feta
  4. Pile on top of the beets
  5. Top with extra Feta and pepper
