Black Bean Spinach Enchiladas


Flavors blend together well.Just make sure all ingredients are in moderation. Could also add zucchini and/or squash. Also, corn could be chopped or grinded.


15 oz. can refried beans
1 1/2 cups corn (I used frozen, thawed)
6 oz. fresh baby spinach
red onions (about half, but adjust so proportionate)
Tomatoes (about half, but adjust so proportionate)
1/3 cup cilantro, chopped
2 tsp. cumin
3 cups shredded 3 cheese blend (or pepper jack, etc.)
6-8 whole wheat or flour tortillas (depending on how much you stuff them)
Enchilada Sauce (about four small cans)
