black bean sweet potato tacos

Ingredients: 

For the sweet potatoes
1 1/2 pounds sweet potatoes (about 2 medium potatoes)
1 teaspoon salt
2 tablespoons adobo sauce (from a can of chipotle peppers in adobo)
1 tablespoon finely chopped cilantro
For the refried beans
2-14 ounce cans black beans, mashed
1 tablespoon oil for cooking
1/2 cup minced shallots (see note)
2 cloves garlic, minced
1 tablespoon cumin
2 chipotle peppers, chopped (from can, packed in adobo sauce)
1/2 cup stock or water
2 teaspoons salt
For garnish
1 ear of corn with kernels cut off cob
1 teaspoon oil for cooking
sour cream
chopped cilantro
fajita size tortillas
