BLACKBERRY BREAKFAST BARS

Notes: 

Crunchy on top and fruity in the middle, these easy breakfast bars are loaded with slow-release carbs and fiber. Blackberries also are high in immune-boosting vitamin C and anti-oxidants, which help fight inflammation. So go ahead, have another after your run!

Ingredients: 

For filling

2 cups blackberries, defrosted if frozen

2 tablespoons sugar

2 tablespoons water

Finely grated zest and juice of 1/2 lemon

1 teaspoon cinnamon

For bar

1 cup whole-wheat flour

1 cup rolled oats

1/2 cup packed light brown sugar

1 teaspoon cinnamon, plus more for dusting

1/4 teaspoon baking soda

1 stick (8 tablespoons) butter, melted
