Makes 4 side salads or 2 entrée sized salads

Ingredients: 

1 head of cabbage, shredded
2 carrots, peeled and cut into matchsticks
1 red bell pepper, cut into matchsticks
2 green onions, chopped
1/2 c. roasted, salted peanuts

Sesame Ginger Dressing:
1 t. minced garlic
2 t. minced ginger
2 T. sesame oil
2 T. rice vinegar
1/4 c. reduced sodium soy sauce or tamari
1 T. agave, maple syrup or honey
1/4 c. water
