Blue Cheese Biscuits

Ingredients: 

4 ounces (115g) blue cheese or Roquefort, at room temperature

4 ounces (115g) unsalted butter, at room temperature

2 tablespoons (30ml) heavy cream or sour cream

1 large egg yolk

3/4 cup (110g) flour

1/4 teaspoon sea salt

1/3 teaspoon red chili pepper

optional: 1/2 teaspoon finely chopped fresh thyme

egg wash: 1 egg beaten with 1 teaspoon water
