1 cup whole spelt flour
1/2 cup almond flour
1/2 cup unsweetened shredded coconut
2 tablespoons chia seeds
2 teaspoons baking powder
1/2 cup fresh or frozen blueberries, plus additional for topping
1 large ripe banana, mashed (about 1/2 cup)
3/4 cup almond or other non-dairy milk milk
1/4 cup coconut oil, melted
1/4 cup maple syrup
1 teaspoon pure vanilla extract
