Bourbon-Glazed Shrimp

1/4 cup plus 2 tablespoons bourbon, such as Bulleit or Maker’s Mark
1/4 cup olive oil
1/4 cup low-sodium soy sauce
1/4 cup chopped green onions
2 to 3 cloves garlic, minced
2 pounds peeled and deveined frozen shrimp, thawed
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Minced Italian parsley, for garnish
