Brazillian Cheese Bread (Pão de Queijo)

These slightly gooey balls of bread are wheat-free and tasty.

Many variations are possible with this bread. The butter could be browned for a nutty flavor. Garlic paste can be added to the butter for 30 seconds before the rest of the liquids are added for a more garlicky bread. Any cheese can be used as long as it can be grated.

Ingredients: 

8 Tablespoons Butter, melted
2 Cups Whole Milk
1/2 Cup Oil
Large Pinch of Salt
4 Cups Tapioca Flour (aka: tapioca starch)
2 Cups grated cow's cheese (any fresh farmer's cheese)
1/2 Cup Cheddar Cheese
4 Large Eggs, beaten


  1. Prep everything as there is little time once the milk mixture comes to a boil.
  2. Combine Butter, Milk, Oil and Salt in a large sauce pan (capable of holding at least 12 cups).  Bring to a boil.
  3. Remove from heat and with a wooden spoon (sturdy), stir in the Tapioca Flour.  Stir in the Cheeses.
  4. Once both the flour and cheeses are incorporated, stir in the beaten eggs until fully incorporated.
  5. Let the dough rest for 30 minutes.  Preheat oven to 350F.
  6. Dish out (#30) about 2 Tablespoons of dough and form into a ball using well floured hands (floured with tapioca flour).  Leave a little space between balls on the cookie tray as they will expand slightly.
  7. Place tray in the center of the oven and bake for 25-30 minutes.  The bread will expand in the last several minutes and brown slightly.
  8. Let cool a couple minutes as the centers are still very sticky and hot.
