Ingredients: 

1 2.46-ounce bar of organic dark chocolate (I use Kallari 70-percent cacao), chopped
1/4 cup unsalted butter, plus more to grease ramekins
1/2 cup whipping cream
1/2 cup whole milk
5 tablespoons brown sugar
1 large egg
4 slices of plain white bread cut on the bias into quarters
4 tablespoons crystallized ginger, minced
4 tablespoon dark rum (Gosling's Black Seal or Meyer's)
Whipped cream, for garnish
Zest of one lime, for garnish
