1 onion, diced
3 cloves garlic, minced (about 1½ teaspoons)
1 cup potato, diced (any variety)

1 15-ounce can black beans, drained and rinsed
1 cup salsa
¼ cup nutritional yeast
2 teaspoons chili powder
1½ teaspoons ground cumin
1 teaspoon salt
¾ teaspoon ground turmeric
½ teaspoon black pepper
¼ teaspoon ground cayenne pepper (optional)
2 cups kale or spinach, finely chopped
8 whole-wheat or gluten-free tortillas
