Broccoli Crunch Salad

4 slices bacon, chopped
1 to 2 heads of broccoli, you want 4 to 5 cups broccoli florets
olive oil
kosher salt and freshly cracked black pepper
1 large shallot, diced (about ¼ to 1/3 cup, or add as much as you like!)
½ cup toasted, sliced almonds

3 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon dijon mustard
2 garlic cloves, finely minced or pressed
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin olive oil
