Broccoli Salad with Carrots and Currants

Ingredients: 

For the dressing:
1 tablespoon Vegenaise (or regular mayonnaise if you prefer)
1 tablespoon spicy mustard
1/3 cup apple cider vinegar
1/4 cup olive oil
2 tablespoons water
Salt and pepper to taste
For the salad:
1 crown broccoli, chopped into small to medium sized pieces
1 large shallot, sliced thin
1 large carrot, shredded
1/4 cup currants
