Broccoli Soup Rice

Ingredients: 

Brown rice - 1 & 1/2 cups
Water - 2 cups (more or less)
1-1/2 teaspoons olive oil
1/2 large onion, chopped
1-1/2 cloves garlic, peeled and chopped
10 ounces broccoli
1/2 potato, peeled and chopped
2 cups vege broth
1/8 teaspoon ground nutmeg
salt and pepper to taste

= GRILL =
cauliflowers - 6x
broccoli - 6x
garlic salt
cayenne pepper


  1. Heat olive oil in a large saucepan, and saute onion and garlic until tender. Mix in broccoli, potato, and chicken broth. Bring to a boil, reduce heat, and simmer 15 minutes, until vegetables are tender.
  2. With a hand mixer or in a blender, puree the mixture until smooth. Return to the saucepan, and reheat. Season with nutmeg, salt, and pepper.
  3. Rinse rice & fill in water at least 1-inch above rice
  4. make the rice half-cooked
  5. pour in part of the broccoli soup into half-cooked rice
  6. let it cooked
  7. Pour rest of the soup over rice & serve with grill cauliflowers & broccoli
  8. Garnish with fresh coriander
