Buffalo Chicken Chili

Serves 4


• 2 chicken breasts
• 1 can black beans
• 1 can corn, undrained
• 1 can Rotel, undrained
• 1 can chopped green chilies
• 1 small red onion, diced
• ¼ to ½ C buffalo hot sauce
• 1 package ranch dressing mix
• 1 tsp cumin
• 1 Tbsp chili powder
• 1 tsp onion powder
• 1 8 oz package light cream cheese

  • Chop onion
  • Drain and rinse black beans
  • Place chicken at bottom of pot, then add corn (undrained), rotel, chilies and black beans.
  • Top with seasonings, ranch mix, and hot sauce. Stir together.
  • Place cream cheese on top.
  • Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili.
  • Remove chicke and use 2 forks to shred chicken.  Add chicken back to pot and stir together.
  • Serve with crushed tortilla chips and additional hot sauce if desired
