Buffalo Chicken Meatball Subs


2 pounds ground all-white-meat chicken
1 small onion, grated
3 cloves garlic, minced
½ cup parsley, chopped
¼ cup blue cheese, chopped
Salt and freshly ground black pepper
olive oil, for drizzling
4 tablespoons butter
1 cup hot sauce, such as Frank's Hot brand
good quality blue cheese dressing for dipping (store bought or see recipe below)
4-6 soft hoagie rolls
