1 c brown sugar (or natural cane sugar)
2 tsp fine grain sea salt
1 tsp fresh rosemary leaves, chopped
1/4 c (1 oz by weight) sesame seeds
2 large egg whites
1 lb (~4 c) shelled walnut halves
1/3 cup (1.5 oz by weight) chopped dried figs, stems trimmed
