Caprese Quiche

Ingredients: 

CRUST
2 cups sifted all-purpose flour
1/2 tablespoon sugar
1 teaspoons salt
1 large egg lightly beaten
1/2 teaspoon white vinegar
1/4 cup ice cold water
3/4 cups cold unsalted butter cut into pieces, 1 1/2 sticks or 12 tablespoons
for brushing: 1 egg + a few drops of water beaten together

FILLING
1 pint grape tomatoes
1/2 tablespoon olive oil
6 large eggs
1 cup heavy cream
3/4 cup freshly grated mozzarella or provolone cheese, or an italian blend
ΒΌ cup finely grated parmesan cheese
3 tablespoons chopped fresh basil, plus extra for garnish
2 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon fresh cracked pepper
1/2 teaspoon salt
