Caramelized Onion Gravy


2 tablespoons vegetable oil
6 cups thinly sliced Vidalia or Spanish onions
½ teaspoon salt
¼ teaspoon dried thyme (3/4 teaspoon fresh)
½ teaspoon minced fresh rosemary
½ teaspoon dried marjoram (1½ teaspoons fresh)
¼ teaspoon freshly grated nutmeg
3 tablespoons soy sauce
2 cups commercial “no-chicken broth”*
¼ cup dry sherry or Marsala
2 tablespoons cornstarch
¼ teaspoon ground black pepper, or to taste
