4 Tbs. (2 oz./60 g.) unsalted butter

4 cups (1 lb./500 g.) diced, peeled pears, such as Anjou or Red Bartlett

2 Tbs. firmly packed light brown sugar

Juice of 1/2 lemon

1/2 tsp. ground cinnamon

4 large eggs, lightly beaten

1 cup (8 fl. oz./250 ml.) whole milk

1 tsp. pure vanilla extract

1 cup (5 oz./155 g.) all-purpose flour

1/8 tsp. kosher salt

Confectioners’ sugar for dusting
