Carrot cake


¾ cup/100g/3½oz plain flour
1 level tsp baking soda
2 eggs, lightly beaten
⅔ cup/150ml/5fl oz skim milk
2 tsp ground cinnamon
2 tsp ground allspice
2 tsp ground ginger
3 large carrots, peeled and coarsely grated
6½–8 tbsp artificial sweetener (to taste)
2 tsp grated orange zest
