Carrot Cake

INGREDIENTS
375 g flour
10 ml baking powder
10 ml bicarb
5 ml cinnamon
3 ml salt
375 g sugar
4 eggs
375 ml sunflower oil
5 ml vanilla essence
750 ml grated carrots
250 ml walnuts
250 ml pineapple
(Icing)
250 g firm cream cheese
125 g butter
500 g icing sugar
5 ml vanilla essence


  1. In a bowl sieve flour, baking powder, bicarb, cinnamon and salt. Add sugar. Make a well and add eggs, oil and vanilla. Mix well. Stir in carrots, chopped walnuts and pineapple. Mix well. Bake at 180ºC for 45 minutes. (Icing) Cream cheese and butter together. Slowly beat in icing sugar and vanilla.
