Cashew Chicken (Slow cooker)

Ingredients: 

Slow Cooker Cashew Chicken
Ingredients:
2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders*
1 medium onion, rough chopped
1 green bell pepper, rough chopped
1 can sliced water chestnuts
1/4 cup soy sauce
2 Tbsp rice wine vinegar
2 Tbsp ketchup
1 Tbsp brown sugar
1 garlic clove, minced
1/2 tsp grated fresh ginger
1/4 tsp red pepper flakes
1/2 cup cashews


  1. Cut chicken into bite size pieces.
  2.   Place chicken in slow cooker.
  3.  Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.
  4.  Cook on Low for 3 hours.
  5. Add vegetables and stir and cook for an additional 2 hours on Low. 
  6. Add cashews and stir. Serve over rice.
  7.  
  8. Makes 4-6 servings.
