2 tablespoons peanut oil
75 g roasted cashew nuts
2 garlic cloves, crushed
1 onion, diced
1/2 green capsicum
1/2 red capsicum
1/2 yellow capsicum
10 snow peas, halved
2 tablespoons fish sauce
2 tablespoons oyster sauce
1/2 tablespoon brown sugar
2 teaspoons cornflour
1/2 cup chicken stock
Mix all sauce ingredients together.
Stir fry cashew nuts until golden and set aside.
Slice pork and vegetables into bite size pieces.
Stir fry pork in oil, along with garlic, then remove from pan.
Add more oil and stir fry the vegatables.
Return the pork to the wok and combine with vegatables. Add sauce to the mix, tossing the contents until the sauce is heated through. Serve and enjoy
