Cast-Iron Roasted Red Potatoes

Notes: 

Serves 4-6

Ingredients: 

1 1/2 lbs red potatoes, quartered
2 tbsp olive oil
salt & ground black pepper to taste
Seasonings (rosemary, etc)


  1. Place a 12-inch cast iron skillet in the oven and preheat oven to 350
  2. When the skillet is hot, add potatoes and drizzle with the olive oil. Add seasonings, salt and pepper to taste, and roast until the potatoes are browned and tender when tested with a knife, stirring occasionally, about 45 mins.
