Cheddar Mashed Potatoes

Ingredients: 

1 Idaho Potato
2 Red Potatoes
1 Cup Cheddar Cheese
1/2 stick butter
1 tsp flour
1/2 cp whole milk


Cube potatoes and boil in seasoned water until soft (about 15 min.) Melt butter in saucepan, whisk in flour. Let cook for 1 min. Whisk in cream and garlic and bring to boil. Lower to simmer, season, and add cheese slowly whisking as it melts. Strain potatoes, mix in cheddar sauce and mash until desired consistency. Put mash into a casserole dish and top with shredded cheddar. Bake at 350 for 10 min. Covered with foil. Uncover and bake until cheese begins to brown. Let stand for 10 mintutes. Serve.
